
We are delighted to share some wonderful news following last year’s A Taste of Knox initiative.
Earlier this term, we received a heartfelt message from Eastern Food Rescue, the organisation that received the proceeds from our student-led cookbook project. The email beautifully highlights the very real and meaningful impact our students have made in the community.
Through creativity, teamwork and entrepreneurial spirit, our students developed a vision for a cookbook, A Taste of Knox. They collaborated with members of our local community to write, publish and sell the book, even taking the time to test every single recipe! The result? Around 80 copies sold and an incredible $817.65 raised to support those in need.
In their message of thanks, Eastern Food Rescue expressed sincere gratitude to the students involved, Ms Emer Fox and supporting staff, and our entire School community. They acknowledged the care and empathy shown towards people in our area who are experiencing hardship, particularly during the current cost of living crisis.
Eastern Food Rescue provides an average of 1.2 tonnes of food and groceries every day, seven days a week, to individuals and families who might otherwise go without. Much of the food they distribute has been set aside by supermarkets and bakeries – items that may be close to expiry, have damaged packaging, or be surplus stock. By redirecting this food from landfill, they are not only supporting people in need but also helping to reduce environmental impact and carbon emissions.
The organisation operates what they call a “market”, a space where food is laid out for customers to choose freely, restoring dignity, autonomy and respect. Rather than simply receiving a pre-packed parcel, families are able to select the items they need most. Customers consistently share how important this freedom of choice and sense of community is to them.
While most of Eastern Food Rescue’s stock is donated, this means they cannot always control the variety of items available. This is where our students’ donation is already making a powerful difference.
The $817.65 raised is being used to purchase essential, targeted items such as:
- Hygiene products for those who otherwise could not afford them
- Long-life pantry staples like rice and pasta for large families
- Small toys for children attending the markets
- Ready-to-eat food packs for people without access to cooking facilities
Eastern Food Rescue President, Mr Mark Carson, shared:
“The money you raised is already making a difference, and you should be incredibly proud of your dedication and hard work.
It is my hope that you can truly appreciate the value of your individual contribution through this and other endeavours, and that you can see how powerfully that contribution is magnified when you collaborate as a united group.”
This project is a shining example of what can be achieved when students collaborate with purpose and compassion. It demonstrates how individual contributions, when combined, can create meaningful and lasting change.
